Tomato and pomegranate salad

Ingrediënten

  • 200 g rode cherrytomaten
  • 200 g gele cherrytomaten
  • 200 g roma tomaten
  • 4 trostomaten
  • 1 paprika
  • 1 rode ui
  • 1 teen knoflook
  • ½ tl gemalen piment
  • 2 tl witte wijnazijn
  • 1½ el granaatappelsiroop
  • 60 ml olijfolie
  • 1 granaatappel
  • 1 el verse oregano
  • zout

Stappen

  1. Stap 1

    In a large bowl, mix together the tomatoes, red pepper and onion (sliced in ½ cm blokjes) and set aside.

  2. Stap 2

    In a small bowl whisk the geperste garlic, allspice, vinegar, pomegranate molasses, olive oil, and 1/3rd teaspoon of salt, until well combined. Pour this over the tomatoes and gently mix.

  3. Stap 3

    Arrange the tomatoes and the juices on a large flat plate. Sprinkle over the pomegranate seeds and oregano and finish with a drizzle of olive oil.
